Recipe: Pizza Omelette

I made a pizza omelette this afternoon for lunch for the first time, and it was delicious! It might sound pretty odd but the flavours totally work and it's really easy and quick to make.

You will need:
  • 3-6 medium eggs, depending on how big you want your omelette. For mine I used 4.
  • half a tsp of oregano
  • a few tbsp of tomato and herb pasta sauce
  • salt and black pepper
  • cheese
  • olive oil 
  • other optional toppings
What to do:
1.  Turn on your grill to high and heat the oil in the frying pan. Beat the eggs together with the oregano and some salt and pepper. Add the eggs to the frying pan and cook on a medium heat for 2-3 minutes. If there's still runny egg sitting on top of the omelette, turn the omelette over when it's ok to do so and cook for a minute. (You don't need to worry too much as the grill will cook the top more later on). I added some cooked spinach to my eggs which is optional. You could also add chopped tomatoes or you don't have to add anything if you don't want to! After you've cooked this for 2-3 minutes, the base should be golden.
2.  Put under the grill for 1-2 minutes until the top has set.
3.  Spoon over the tomato pasta sauce and top with cheese and any other toppings you like. I used cheddar, mozzarella would be amazing on this! Pop back under the grill and cook for another 1-2 minutes until the cheese has melted and has started to go a golden brown.
